Fruity and crisp

Pale colour with bright green highlights. Clear nose of white flowers, fresh almonds, a hint of salt. Beautiful balance on a light, frank and straight body, without softness. Character with iodine notes. Sapid and quite long finish.

Features

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Domain and appellation

  • CHÂTEAU DE L'HYVERNIERE

    The 15th century château was completely destroyed by fire during the French Revolution, then rebuilt and purchased in 1922 by Auguste Sautejeau, who transformed it into a vast wine-producing estate. In 2007, it became part of the Castel Family of Châteaux and Domaines.

        Terroir: This 58-hectare estate, located in the communes of La Chapelle Heulin and Le Pallet, about 30 kilometres from Nantes, is planted on sandy clay, sandstone, schist and mica schist soils.


        Vinification: Pressing is carried out at low pressure. The must is then immobilised, cold, for 7 days. This is followed by fermentation at 15°C for 24 days. The wine is then aged in stainless steel and concrete vats on fine lees for 6 months with regular stirring of the lees to give the wine finesse.
