Our oenologists' opinion
Fruity and well-rounded
Deep straw yellow colour. Open nose with notes of honey, ginger and dried apricot, a hint of candied lemon and papaya. Greedy attack, with notes of date paste, honey and orange jam. Gourmet finish, tension and finesse.

Features
Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.
Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.
Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.
Do you know ?
Used in the production of sweet and mellow wines, the Botrytis cinerea fungus covers the grapes with a "noble rot" which concentrates their sugars and aromas.

Chateau de Cérons
Listed as a historical monument in 2008, this wine-growing Charterhouse built in the early 18th century is located in the heart of the village of Cérons, in the Graves region. Bought in 1958 by the Perromat family, the château produces an AOC Cérons sweet wine as well as red and dry white wines in the Graves appellation.
Terroir: This estate of 26 hectares of vines rests on a fabulous terroir marked by two specificities: a subsoil of asteriated limestone slabs covered with alluvial gravel and a microclimate which allows the development of Botrytis Cinerea.
Viticulture: Sustainable agriculture is favoured in order to preserve the vines. The grapes are harvested by hand.
Vinification: A very slow pressing is recommended for the botrytised grapes. The wine is aged in barrels for 18 months. This sweet wine is lighter in sugar than the neighbouring Sauternes and Barsac. -
