Our oenologists' opinion
Fruity and crisp
A golden colour with green highlights, clear and brilliant.
A clean, mineral nose with salty, floral and yellow fruit notes.
On the palate, it is round, taut and well-balanced, with lovely liveliness and a hint of fresh asparagus.

Features
Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.
Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.
Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

LES VAUX SEREINS
Founded in 1923, the La Chablisienne cooperative now covers 25 per cent of the Chablis vineyards, with more than 300 winegrowers.
Terroir
Spanning 1,175 hectares, La Chablisienne’s vineyards are situated on Kimmeridgian soils, consisting of alternating layers of marl and marly limestone containing deposits of small oyster shells.
The plots are generally south-east, south and south-west facing, forming a mosaic of different microclimates.Viticulture
The cooperative is unique in that it harvests the grapes as must, so that the quality of the different plots can be assessed immediately. -
