Well-rounded

This wine reveals an open and expressive nose with bouquet, candied red fruits and notes of roasted coffee beans.


On the palate, the attack is supple and satiny, carried by a lovely character, beautiful balance and finesse.

 

The sapid finish, both balanced and elegant, prolongs the tasting with great harmony.

Features

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

Domain and appellation

    Founded in 1825 in Nuits-Saint-Georges, in the heart of the Burgundy vineyards, Domaine Faiveley now owns over 120 hectares of vines.

     

    The vision of Ève Faiveley and Erwan Faiveley, the 7th generation, is to express Burgundy’s greatest terroirs through a style combining power, finesse and elegance.

     

    Vinification & ageing

    The grapes are hand-harvested and carefully sorted. Daily punch-downs are carried out to gently extract colour, tannins and aromatic compounds from the skins.

     

    After around 19 days of maceration, alcoholic fermentation is complete. The free-run wine is drained by gravity, while a slow, gentle pressing of the marc produces a remarkably pure press wine.

     

    The wines are then aged for 14 months in French oak barrels, with 20 to 30% new oak, selected for their fine grain and moderate toasting. The final two months of ageing in tank allow the wine to reach perfect balance.
