Fruity and well-rounded
Straightforward nose revealing aromas of raspberry coulis, black pepper and herbs, with hints of roasted plums.
The attack is fleshy and enveloping, followed by a long, straightforward finish marked by red fruit coulis.
A long, greedy, fruity finish with good persistence.

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.
Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.
Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.
Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.
Le saviez-vous ?
A perfect accompaniment to wild boar stew, lentil perdre au, duck breast with figs and aged Cantal or Epoisses cheese.
Also great with chocolate cake or French toast with red fruit.

DOMAINE HAUT-LIROU
The vines are located on the southern slopes of Pic Saint-Loup.
The soil, composed of alternating hard limestone and marl, provides limited water supply, allowing the vines to concentrate their full potential in the fruit (yield: 25 hl/ha). This blend is crafted from the best parcels of the estate: terraced vines at 300 metres altitude, a unique feature in the region.
Winemaking: Alcoholic fermentation is carried out under constant temperature control, limited to 25°C maximum. Daily extraction and homogenisation operations, such as pumping over, rack and return, or punching down, are performed. Maceration lasts 2 to 4 weeks, followed by draining and pressing of the pomace.
Ageing: For 12 months, divided between 80% in stainless steel vats and 20% in French oak barrels.
