Our oenologists' opinion
Fruity and well-rounded
Fragrances of juniper and fennel, allied with a grey pepper scent, are released by this gin. Well-balanced, it is also full-bodied. A light sweet taste is perceptible. Fresh, this gin has a strong personality thanks to spice notes recalling cumin, star anise and candied ginger.
- Keeping level Ready to drink
Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.
Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.
Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.
Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

Domain and appellation
The juniper berry is cultivated at the castle of Bonbonnet. To elaborate this gin, this herb is mixed with 18 other spices: coriander, cardamom, angelica, cumin, nutmeg, almond, paradise seeds, liquorice, cubeb, savory, cinnamon, star anise, redcurrant, iris, violet, fennel and orange and lemon peels.
- Manufacturing: The Citadelle Gin is the result of a progressive infusion. Every one of the 19 spices has their own time of infusion, in a French wheat neutral alcohol whose percent proof also varies. This work is a patented technique. It is the only patent given for gin fabrication.
