The origins of the eau-de-vie date back to the Middle Ages. At that time, the alchemists were trying to create an elixir of immortality. Made by distilling alembic fruit or wine, the elixir of life obviously did not have the desired effect. However, it was long attributed for medical properties.
Domain and appellation
Son and grand-son of wines negotiator, Etienne Brana, founded the Brana distillery in Saint-Jean-Pied-de-Port, in the Pays-Basque region, in 1974. Since then, the Brana family continues the tradition of winegrower-distiller-distributor. The family has its own orchard of Williams pears, located on hillsides.
Ripe pears ferment in stainless steel tanks. The pear wine is then kept in airproof vats and the distillation is made in Scottish pot stills, a slow process that creates a high-quality eau-de-vie. It is then put in stainless steel tanks.
The quick evolution of ether demands a constant observation and frequent tastings.
