Powerful bouquet

Caramel colour with a coppery sheen. Frank nose, caramel, vanilla, sweet spice, dry fruit. Supple attack of sweetness, balance. Frank length on vanilla and caramel. Notes of cola. Frank character, good persistence on the coconut.

Features

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

Don Papa 10 Year Old is distilled from molasses, known locally as "black gold", which comes from one of the many local mills on the island.

Domain and appellation

    Don Papa 10 Years Limited Edition is a blend of different casks of rum over 10 years old. It is produced exclusively from sugar cane grown on the island of Negros. The molasses is rigorously selected to retain only the richest and sweetest. Distilled in a column still, the rum is then aged for ten years in re-burned American oak barrels which give it the oak and vanilla notes characteristic of old rums. The intensity of its colour is explained by the fact that the proportion of angels in the Philippines is one of the largest in the world and that the Filipinos, by tradition, do not use wort. The amount of juice that the angels have left us after 10 years is therefore very small and deeply coloured and concentrated.
