Powerful bouquet

Deep yellow gold colour with coppery tints, clear and brilliant. Open nose with notes of caramel, vanilla, aniseed and cereals. Round, greedy attack, beautiful envelope, character on vanilla, almond milk, apricot jam, white chocolate and roasted hazelnut. Sappy finish, medium persistence on tobacco leaf, milk caramel, good balance.

Features

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

Do you know ?

After ageing in white Burgundy barrels, the finish is carried out in Meursault barrels from the CADUS cooperage.

Domain and appellation

  • GUILLON

    Located in the heart of the Montagne de Reims Regional Natural Park in Louvois, the Guillon distillery has been producing a malt-based spirit drink with a unique and incomparable taste since 1997.

    •     Production: The malt flour is mixed and stirred with water for 4 hours: this is the hydrolysis stage. The result is a very sweet malt syrup which is then fermented for 3 weeks at 20°C with champagne yeasts. After 2 distillations, it ages for years in Meursault casks, before being placed in finishing casks for 6 to 8 months.
