Our oenologists' opinion
Well-rounded
Its straw color offers a nice bouquet nose of hazelnut and biscuit. As for the taste this wine has a character of great balance and depth. It is full-bodied, full and ample with mineral notes. Its finish is tense and vibrant with a good length on melting bubbles.

Features
Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.
Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.
Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Domain and appellation
-
Bollinger
Founded in 1829, the prestigious Bollinger was born from the association of three men: Athanase Louis Emmanuel Hennequin - Count Villermont, Jacques Joseph Bollinger and Paul Renaudin. The name "Special Cuvée" of the Bollinger House exists since 1911.- Terroir: Located at Aÿ, a converging point of three regions of the Champagne region (la Montagne de Reims, la Vallée de la Marne and la Côte des Blancs), this area of 160 hectares lies on clay-limestone and chalk gravel.
- Viticulture: The vineyard covers two thirds of its grape requirements. Environmentally, Bollinger is the first house to obtain, in 2014, the new certification "Sustainable Viticulture in Champagne."
- Vinification : The Special Cuvée is slightly dosed and aged in the cellar for at least 3 years. This aging, much longer than required by the rules of the appellation, allows a perfect development of aromas.
