Our oenologists' opinion

Powerful bouquet

Balance and freshness are the key-words for the tasting of this yellow gold shiny champagne that releases fragrances of fresh straw and red fruits. In the mouth, its nice temper expresses itself, unveiling pleasant bubbles which slightly melted and a winey side that makes it ideal to be tasted during meals.

Features

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Domain and appellation

  • Christophe Lefèvre

Christophe Lefèvre is a wine-grower established at Bonneil on a estate of 4 hectares 30. The key-words of his establishment is the know-how and the respect of the nature.

    • Terroir: The Bonneil Mount is a hamlet dominating the Marne valley. The vineyard is facing south and peaks at 100 meters. The bottom of the hill is composed of alluviums of sand. At half-hill, the soil is made of limestone with an undercoat of sand. The peak of the hill is composed of clay and limestone. Each hectare has 8 000 plants.

    • Wine-making: The pressing is made thanks to a traditional press. The musts ferment with indigenous yeasts. Wine rests in tanks in enamel or stainless steel that preserve their fruity flavor. The wine is racked only on a waning moon, meaning that the change of containers is done only in function of the moon’s position. This position generally influences the plants and the wood. Wines are non-filtered.
