Powerful wine with potential
Blonde beer with off-white foam, good hold. Aged gold colour with a golden sheen. Frank nose, with honey, candied apricot, notes of caramelised cereals and bread. Supple attack with good balance. Straightforward lengthening of medium body. Character on caramel, brioche bread. Slight lengthening with frank character. Average persistence but thirst-quenching.
Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.
Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.
Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.
Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.
Domain and appellation
A golden ale, thirsty blond, brewed with local and quality products. An unpretentious beer, for beer drinkers that are looking for a slight and not too hoppy beer. The phoenix refers to the idea of renewal and recycling like the materials used at Cité Fertile, where the beer is brewed. The phoenix represents the renaissance of a town (Pantin), of a district and more generally of beer.
