Fruity and well-rounded
Purple colour. Clear nose of raspberry coulis, aromas of wood and vanilla. Opens up with aromas of mocha and roasting. Supple attack of balance. Frank length on the black fruit coulis, blackcurrant. Notes of thyme. Good persistence.

Features
Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.
Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.
Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.
Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

Domaine Prieuré de Saint-Jean de Bébian
Bébian is a leader in its unique terroir and its great wines.
Terroir : Spread over 32 hectares with the Cévennes as a backdrop, the white grape vines are planted on limestone soils worthy of the greatest terroirs of Burgundy and Champagne, with limestone levels above 30%. The red vines are planted on arid and stony limestone, clay-limestone and clay-silica soils.
Viticulture: The vineyard was completely transformed in the 1960s with the addition of noble Rhone varieties (such as Grenache, Syrah and Mourvedre) to the traditional Mediterranean varieties (such as Carignan and Cinsault). Harvesting is done by hand.
Vinification: The wines are vinified on a parcel-by-parcel basis in concrete vats and stone vats dating from the 18th century. A maceration of 4 to 6 weeks is followed by maturation in 2 year old French oak barrels or in thermo-regulated stainless steel vats, depending on the grape variety.
