Our oenologists' opinion

Powerful bouquet

Garnet colour with brick tints. The nose is open, spicy and vinous, with notes of menthol, kirch, undergrowth and laurel, and hints of kernels and cocoa. Well-balanced, fleshy attack, well-crafted, with long, fat tannins, medium body and finesse. Sappy finish, full-bodied, medium persistence on cherry gratin and black pepper.

Features

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

Domain and appellation

    The entire 5-hectare estate is certified organic for the 2018 harvest. The grapes are harvested by hand and rigorously sorted before being placed in vats. All the grapes are destemmed and then carefully handled by gravity to avoid crushing the pips. The winery is equipped with a temperature control system. Since the 2016 harvest, I have been reducing sulphites during vinification for the red wines, and since 2020 for the whites. The wine is matured in barrels in the cellar for one year. The aim of all these operations is to produce a quality wine, full of flavour and with silky tannins.
