Founded in 1843 at Aÿ by Edmond Besserat, the Besserat Bellefon House is now part of the Lanson-BCC Group (Boizel Chanoine Champagne). The Cuvée des Moines is available in 5 varieties of champagnes called "gourmet", designed to accompany a whole meal.
- Viticulture: The House of Besserat Bellefon has a vineyard of 25 hectares, mainly located in the Marne Valley and uses a groupeBCC of winemakers network to procure grapes.

In addition, the use of short-run liquor dose allows creating bubbles 30% thinner and with a creamier side.
