Caractéristiques

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Le domaine et l'appellation

  • Created in 1923, the Chablisienne cooperative now covers 25% of the Chablis vineyard with more than 300 winegrowers. Terroir: Spread over 1175 hectares, the Chablisienne vineyards are located on Kimmeridgian soils with alternating marl and marly limestone with small oyster deposits. The parcels are generally exposed to the south-east, south and south-west with a mosaic of different climates. Viticulture: The cooperative has the particularity of harvesting the grapes in the form of must in order to immediately evaluate the quality of the different plots.
