Powerful bouquet

The nose is open, frank and typical, dominated by aromas of redcurrant, pomelo, morello cherry and exotic fruit, with hints of grey pepper and a slight menthol note.

 

Full-bodied and taut on the palate, this is a typical, spicy wine with a good body and balance, perfect for accompanying a meal.

 

The finish is spicy, marked by notes of pepper and crushed raspberry, with hints of citrus fruit and sweet spices. Full-bodied and ample, it lingers well on the palate.

Features

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

Domain and appellation

  • NOBLE-JOUÉ

    Terroir: Sandy-siliceous soils with a high concentration of flint stones on the surface.
    Winemaking: A blend of Pinot Meunier, Pinot Gris, and Pinot Noir. Each grape variety is vinified separately. The grapes are pressed immediately after harvest to produce a pale grey wine known as "œil de perdrix".

     

    Fermentation takes place in stainless steel tanks at controlled temperatures between 18 and 20°C, using cooling coils. It lasts 1 to 2 months and occurs naturally, without added yeast.

     

    The wine is then aged on fine lees for 3 months, with regular lees stirring (bâtonnage) to enhance roundness and build aromatic complexity.
