L'avis de nos oenologues

Powerful bouquet

The nose is open, clean and distinctive, marked by notes of vanilla, dried apricot and dried mango, with a hint of roasted pineapple.

The attack is clean and powerful, carried by a delicate texture.

The palate reveals notes of milk chocolate and caramel, with a slight savoury bitterness that gives structure to the whole.

The finish is powerful and lingering, dominated by notes of tobacco and candied exotic fruits, lending depth and intensity.

Caractéristiques

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

Le domaine et l'appellation

  • RHUM CLÉMENT

Since 1887, the prestigious Clément rum has been produced in the purest tradition, according to the rules inherited from Homère and Charles Clément. Clément agricultural rum is produced in strict compliance with the rules of the Appellation d'Origine Contrôlée (AOC Martinique) from the direct distillation of pure sugarcane juice, fermented and then aged in oak barrels at the Habitation Clément. Listed as a "Historic Monument" in 1996, then awarded the "Maison des Illustres" and "Jardin Remarquable" labels in 2016, the Habitation Clément is now Martinique's leading tourist site, attracting over 200,000 visitors a year. Today, the art of ageing Rhum Clément is organised around 6 cellars housing almost 12,000 casks. Julien Thimon, cellar master since 2020 and with the Habitation for more than 20 years, and his teams are in charge of this constantly evolving heritage.
