Powerful bouquet
The nose is straightforward, dominated by a racy bouquet, aromas of tobacco and a touch of iron grime.
It then opens up to notes of roasted black fruit and bitter cocoa.
The attack is supple, round and well-balanced, with a frank, racy character.
The finish is long, with hints of mocha and tobacco, and lingers well, leaving a fine imprint on the palate.

Caractéristiques
Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.
Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.
Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.
Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.
Le domaine et l'appellation

CHÂTEAU OLIVIER
From the knights of the Hundred Years' War to the philosophers of the Enlightenment, this ancient seigneury has seen a succession of men with very distinctive characters. A vestige of history, the wines of Château Olivier have been classified as Grands Crus since 1953.
Terroir: Spread over 60 hectares, this vineyard lies on gravelly soil with a clay-limestone subsoil.
Viticulture: The vines are 20 years old (red) and 30 years old (white). They are pruned in single and double Guyot. The grapes are harvested by hand, in small crates, with selective sorting in the vineyard and then in the cellar.
Vinification: Alcoholic fermentation takes place for 10 to 30 days at 25/30°C in temperature-controlled vats, followed by malolactic fermentation in barrels. The wine is then matured for 12 months, 1/3 of which in new barrels. -
