Our oenologists' opinion
Fruity and crisp
Sandy beige color with pinkish beige reflections, limpid and brilliant. Nose on notes of pink grapefruit. On the palate, acidulous attack, sparkling, quite aromatic, good balance, mineral hint. Crunchy, tense finish, on the freshness, medium persistence.
Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.
Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.
Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.
Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

The grey wine is another variety of rosé, characterized by a very pale look with grey highlights. This is developed by a rapid maceration during the winemaking process or by the use of grey grapes such as Grenache Gris, Pinot Gris, Sauvignon Gris ...).
Domain and appellation
Château de Fonscolombe
Located not far from Aix en Provence in the town of Puy Saint Reparade, Fonscolombe Castle goes back to the eighteenth century. The domain is located in an exceptional landscape, near the Lubéron and the Sainte-Victoire mountains.
- Terroir: This huge area of 144 hectares lies on rocky soils that are very draining. On fourty of those hectares, vines grow and take advantage of this continental climate.
- Viticulture: The castle was awarded for its viticultural practices that respect the environment, which led them to obtain the certificate by the Démarche Qualité Environnement du Vigneron Indépendant.
- Wine-making: To intensify the expression of the fruit, the wine-making process is done using thermo-regulated stainless steel tanks at low temperature. The skin maceration is done cold.
