Our oenologists' opinion
Dark garnet colour with bright red reflections, purplish hints, opaque and dense. Open nose with hints of candied cherry, vanilla, garrigue and liquorice. Quite greedy. Fairly firm attack, on fairly raw tannins, character on the stick of liquorice. Vegetal finish, lack of finesse, rather rustic with notes of candied black cherries and coffee grounds.
Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.
Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.
Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.
Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.
Domain and appellation
Château Rivière has 75 hectares of vines, some of which are more than 50 years old, and face due south on the foothills of the Montagne Noire. This means that the vines benefit from plenty of sunshine, which gives the grapes a good ripening. This cuvée is macerated for 4 weeks during which time gentle extractions are made, and then matured in stainless steel tanks.
