Fruity and crisp
Pale yellow colour with green highlights. Straightforward nose with hints of fresh citrus fruit. Opens on notes of white flowers. Fresh attack, tension. Straightforward mouth, with a long acidic finish, on acacia and fresh citrus fruit. Straightforward finish, minerality. Good persistence.
Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.
Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Château de l'Hyvernière
This castle of the 15th century has been completely destroyed by a fire during the Revolution and rebuilt to be purchased in 1922 by Auguste Sautejeau, who transformed it into an enormous vineyard. In 2007, it has been acquired by the Castel family.
- Terroir: This area of 58 hectares placed in the towns of Chapelle Heulin and Pallet, about thirty kilometers from Nantes, is located on sandy soils made of clay, sandstone, schist and mica schist.
- Vinification: Pressing is carried out at a low pressure. Then the must is unmoved for 7 days. This step is followed by a fermentation at 15 ° C for 24 days. The wine ages in stainless steel and concrete tanks on thin dregs for 6 months, subjected to a regular bâtonnage (the lees set at the top of the tank is mixed with the must). The bâtonnage is bringing finesse to the wine.
