Our oenologists' opinion


Its brick color announces a wooded and roasted nose with aromas of red fruits, black cherries and fruits’ cores. The finish is nervous on melting tannins.

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

Cabardes is the only appellation who equally blends Bordeaux grape varieties with Rhône Valley ones.

    Located close to Carcassonne and built by the Languedoc State Treasurer, Bernard de Pennautier, the Château de Pennautier is today classified as an historic monument. 
    • Terroir: Spread across 146 hectares, the vineyard is perched high at 200/400 meters of altitude on sunny side hills and limestone-clay soils. 


    • Vinification: The wine ages in stainless steel tanks after a long maceration of 25-30 days.
