Our oenologists' opinion

Fruity and well-rounded

Garnet colour with brick tints, dark, dense, opaque and brilliant; open nose with notes of plums and roasted blackberries, frank, with a hint of vanilla; velvety attack, present tannins, tension, fullness, character of undergrowth and liquorice, full-bodied; racy, full-bodied finish, with grainy tannins, a little more length on black fruits and notes of fur, ideal with a couscous or a duck confit

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

From AOP Cabardès to AOP Malepère, via IGP Cité de Carcassonne, IGP OC and IGP Côtes de Prouilhe, the Vignobles de Vendéole offer a range of wines rich in style and diversity.

Domain and appellation

Cers-Volant is a blend of 80% Merlot and 20% Cabernet Franc. These are indeed the characteristic grape varieties of the Malepère. The terroir and the climate give them a greediness which makes the reputation of the wines of the AOP. This wine is made from a selection of plots, and is matured partly in stainless steel vats, and partly in one-wine barrels, for 8 months.
