Our oenologists' opinion

Fruity and crisp

Bright red garnet colour with bright red reflections, limpid and brilliant. Open nose with notes of cherry, morello cherry jam and blackcurrant syrup, hints of pits and dark chocolate. Supple attack, tension, fullness, character on morello cherry syrup. Tense, fruity and well-balanced finish. Satiny tannins. Beautiful lengthening on morello cherry syrup and cinnamon.

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

Do you know ?

Henri IV and Louis XIV had a predilection for this wine.

Domain and appellation

  • Domaine de L'abbaye

The Epineuil vineyard, near Chablis, has an exceptional micro-climate. The soil belongs to the kimméridgian type. It is composed of clay and limestone, which benefits the vines. A modern winery is neighbours aging cellars, inherited from the monks of the Quincy abbey that settled there in 1212. These facilities help the elaboration of a delicate, light and elegant wine in a traditional way using oak barrels.
