This garnet-colored wine is dark, shiny and thick. It releases fragrances of stewed plum and date paste. The attack, fruity and supple, honor the finesse of this wine. This fruity side is still present during the finale that highlights its character. A light spicy touch accentuates the whole at the end of the tasting.The wine must be aereted before tasting.



Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

Domain and appellation

  • Maison Bialoni

    Georgia, and generally speaking, the Caucasus Basin, is the birthplace of wine. Archeological excavations has shown that wine production was already put in place 8 000 years ago.

    • Terroir: The domain covers 61 hectares, planted 18 years ago.  Each hectare has 4 400 plants. The soil is rich and the climate fertile. The diversity of grape variety and the tradition has played a major role in this wine’s development.
    • Viticulture: Harvests are done manually. The maison Bialoni has chosen the reasoned culture and want to shift to organic culture as soon as 2020.
    • Wine-making: The first step is the cold pre-maceration during 4 days. Then, it is time for the traditional wine-making, at 31 degrees, followed by a post-fermenting maceration of 7 days. Finally, the wine rests for 9 months.
