Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.
Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.
Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.
Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

The Hatozaki lighthouse, whose silhouette appears on the label, was chosen as the emblem of HATOZAKI whiskies: built in 1657, it is the oldest stone lighthouse in Japan. It was classified as a Historic Monument in 2014.
Domain and appellation
The Yonezawa Family, sake brewers since 1856, started distilling in 1917. As the celebration of 100 years of spirits production approaches, the House installed two new Forsyth's stills. This renovation gave birth to the distillery named Kaikyo in homage to the famous Akashi- Kaikyo bridge located in front of the distillery. Hatozaki Pure Malt is a blend of 100% pure malt whiskies that have been aged in 3 types of casks: Bourbon, Sherry and local Mizunara oak. It is then bottled without adding colour and without cold filtration.
