Its light straw color introduces a blooming nose with aromas of biscuits and almond dough. The palate is balanced, bold, big, round and nervous with a lingering coated finish on buttery bubbles. A success.
Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.
Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.
Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Champagnes are classified under three different categories, the crus, grands crus and premiers crus. Among 320 crus, 17 are rated as grands crus and 44 as premiers crus.
Domain and appellation
Established in 1808 by Apolline Henriot, the maison stands among the most prestigious Champagne brands thanks to an ancestral savoir-faire and a distinctive way to magnify the chardonnay.
- Terroir: The Montagne de Reims and Côte des Blancs serve as cradles to the production of pinot noir and chardonnay.
- Viticulture: The grapes are issued from 15 selected crus of the Côte des Blancs and Montagne de Reims. Strict specifications are required to the different winegrowers in order to get qualitative harvests. The chardonnay is cut according to the Chablis method and the pinot noir according to the Cordon de Royat one. The vines are worked in a sustainable way and the harvests handpicked.
- Vinification: The plot-by-plot pressing occurs on site in order to preserve the grapes during their transportation to the vat room. 33% of the blend is issued from four different vintages with a total amount of 40% of chardonnay and 60% of pinot noir. The wine lays for three years in a chalk cellar prior to the degorgement. The wine then ages for 8 months.
