Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine. Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure. Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time. Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only. Do you know ? Wine estate located in Châteauneuf-du-Pape, Château Mont-Redon has been owned by the Plantin family, Héritiers Abeille-Fabre, since 1923. Domain and appellation CHATEAU MONT REDON The wine estate is currently run by the 4th generation. More than half of our vines are planted in the "galets roulés", commonly known as the "plateau de Mont-Redon". The other vines are planted in the safres or in the urgonian limestone soils. After complete de-stemming, the wine is vinified by punching down the cap for fifteen to twenty days of maceration to ensure maximum extraction of the tannins and colouring matter. Once the malolactic fermentation has been completed, half of the blend is aged in 228-litre Burgundy barrels, the other half being kept in vats. After a selection of our best vats for bottling at the estate, the wines are blended in the spring. The bottling takes place about 18 months after the harvest.
