Features

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

Near Auxerre, in the Yonne valley, in the commune of Saint-Bris-le-Vineux, the cradle of Bailly Lapierre has been located since the beginning (1972) in a very old underground quarry whose galleries cover more than 4 hectares.

    The Bailly Lapierre cellars, located 50 metres underground, in the heart of the Tonnerre stone, are a magical and enchanting place, a showcase for the ageing of these wines and crémants. Vinification: After a rigorous selection of wines, our cellar master applies all his know-how to the blending and ageing in our cellar, in order to preserve the suppleness of the red Côtes d'Auxerre, while giving it the Bailly Lapierre style. Terroir : Upper Jurassic limestone (Kimmeridgian and Portlandian: 145 to 160 million years old).
