Fruity and light

With its pale pink color, this wine offers an open nose fresh of white fruits, pears, lychees, acacia and dill. On the palate, it has a good balance, frank with freshness. Finale on mineral and salty notes.

Features

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

Domain and appellation

  • Château Cavalier

    Property of the Maison Castel since 2000, the Château Cavalier is located between the cities of Aix-en-Provence and Nice, in the Var region and produces high-quality rosé wines.
     
     

    • Terroir: Spread over 132 hectares, the vines evolve on sandy and limestone soils, made of sandstone and clay soils, helping the drainage. Each hectare has 5 500 plants.


     

    • Viticulture: The harvest are done overnight, at the freshest hours, in order to avoid oxidation.


     

    • Wine-making: Each grape variety is vinified separately in thermos-regulated tanks. The cinsault is vinified at low temperatures and very low turbidity to multiply its aromas. The grenache is subjected to a skin maceration (between 4 and 8 hours). A classical fermentation takes place between 14 and 18 ° C depending on the grape variety. The wine ages in stainless steel tanks during 2 to 3 months.
