Powerful wine with potential
Fragrances of pineapples, exotic fruits and grapefruit are honored by this salmon-pink-colored wine. The attack, allying nerviness and balance, turns out to be also acidulous and greedy. The finale is full of flavors and all about freshness.
Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.
Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.
Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.
Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

There are two winemaking methods for the rosé. The direct pressing one consists of thoroughly pressing the grapes after the harvests. The maceration or bleeding consists of letting the grapes soak in stainless steel tanks.
Domain and appellation
Since 1991, Les Jamelles has been made up of a unique collection of artisanal grape variety wines from Pays d'Oc. With the Chardonnay Les Jamelles, Catherine Delaunay wanted to show all her burgundy expertise.
- Terroir: The foothills of the Cévennes (clay-limestone and basalt soils), the Hérault plain (rich and pebbly clays), the Aude Valley, and the Limoux region (clay and limestone soils).
- Vinification: This rosé is prepared by direct pressing. The must is clarified by flotation to obtain a very clear juice, which is then vinified as a white wine and fermented at a low temperature (15° C). No malolactic fermentation.
