Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

Domain and appellation

  • Domaine Larroque

    The Larroque domain is well-known for its sandy soil « blessed by Gods ». Indeed, this land is able to conserve an optimum humidity even by hot weather, in the manner of the mehari that illustrate the label of its bottles, the land of the Larroque domain is faithful and generous.

     

    • Terroir: Located at the bottom of buttress of the Atlas on a sandy soil and peaking at 700 meters, the Larroque domain offers an undulated view of the whole region of Meknès in Morocco.
       
    • Viticulture: Harvests are done manually.
       
    • Wine-making: Each variety is separated and put in tanks using high-end techniques such as the control of temperature and the selection of yeasts. The assembly is made before the decantation that lasts several months.
