Our oenologists' opinion


The garnet-colored wine has fuchsia highlights. Fragrances of black fruits and of eau de vie are mixing with a light touch of black pepper. The attack, acidulous and fruity, reveals the personality of this wine. The finish is tasteful, round and greedy.



Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

In the Grand Auxerrois and the Yonne department, Irancy stands on the right bank of the river about fifteen kilometers south of Auxerre and southwest of Chablis. It is one of the most typical villages of the Auxerrois vineyards.

    Founded in 1840, the Simonnet Febvre firm is a traditional Chablis house, one of the most ancient. Simonnet-Febvre is one of the only Chablis house to perpetuate since its origins the making of sparkling wines from the traditional method. Grapes come from hills of the Grand Auxerrois.

    • Terroir: The Irancy vineyard is located in a amphitheater protecting it against north winds. This location has a solar exhibition in the south / south-west.
    • Viticulture: The vineyard is on the limestone marls of Upper Jurassic Kimmeridgian and Portlandian.
    • Wine-making: The wine ferments and macerates during three weeks in stainless tanks between 20°C and 30°C .
