Our oenologists' opinion

Fruity and well-rounded

The nose of this dark garnet-colored wine releases greedy fragrances of caramel allying to spiced scents and fruity notes recalling the blackcurrant. Suppleness and tension are to be found, in mouth, rejoining the roundness of the tannins. A winey taste follows, the whole creates a good balance with length that demonstrates the temper of this wine.

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

Domain and appellation

  • Domaine des Fontaines

Located in Lieuran les Béziers on a road connecting the Mediterranean Sea with the Central Massif, the Domaine des Fontaines belongs to the Montariol family. Its savoir-faire and its experience are passed down since four generations. Nowadays, it is Léopold, Joseph, Bernard and Stéphan that elaborate and vinify the wine, keen by their love of the terroir.

    • Terroir: The domain extends on 80 hectares and is located on clay-limestone hills.
    • Viticulture: The vineyards are exposed south. Yields of the vines are controlled thanks to the green harvesting. Harvests are done at the optimum ripeness of fruits.
    • Wine-making: Several “remontages” are done to extract the tannins. It consists in pumping the must located at the bottom of the tank and putting in on the top, on the marc. Thus, the wine enhances its flavors and its style becomes sharper.
