Domaine San de Guilhem
The San de Guilhem domain extends on 60 hectares. Are cultivated many grape varieties whose colombard, sauvignon blanc, gros manseng and ugni blanc.
- Terroir: The soil is composed of clay and limestone. Each hectare has 4 000 plants.
- Viticulture: Harvests are done mechanically as soon as the beginning of September and until the middle of October.
- Wine-making: A skin maceration is done during 8 to 18 hours before the step of the pressing, which is progressive and mild. The fermentation is then made with controlled temperature. The malolactic fermentation is not done to preserve the freshness of the wine. The first bottling are made at spring.
