Fruity and crisp
With its salmon dress, this wine offers a fairly open nose on a floral tip of hawthorns, then fruity with currants. On the palate, it has a good balance, freshness, on a nice fruity and fresh character. Finale on finesse.

Château Cavalier
Property of the Maison Castel since 2000, the Château Cavalier is located between the cities of Aix-en-Provence and Nice, in the Var region and produces high-quality rosé wines.
- Terroir: Spread over 132 hectares, the vines evolve on sandy and limestone soils, made of sandstone and clay soils, helping the drainage. Each hectare has 5 500 plants.
- Viticulture: The harvest are done overnight, at the freshest hours, in order to avoid oxidation.
- Wine-making: The grape varieties Syrah, Rolle, Semillon and Cabernet Sauvignon rest in motionless thermo-regulated tanks during 15 to 18 days. The Grenache is subjected to a skin maceration during 4 to 8 hours. The fermentation lasts 4 to 8 hours in function of the grape variety, with a controlled temperature. The wine ages on complete dregs for 2 months, and then on thin dregs for one to two months.
