Our oenologists' opinion

Powerful bouquet

Fragrances of cocoa, black cherry and roasted prune are released by this dark garnet-colored wine. In mouth, the attack unveils dense tannins. The whole is enveloping and full-bodied. The tasteful finish demonstrates all the temper of the wine with its aromas of wood and roasted red fruits. The whole is extremely persistent in mouth.

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

This wine has won a gold medal at the Concours de Bordeaux.

Domain and appellation

  • Château Caillivet

The domain of the château Caillivet is located in Mazières, 35kms away from Bordeaux.

    • Terroir: 10 hectares of vines, based on a clay-gravel soil, are cultivated.
    • Viticulture: A great care is given to the vines: the use of chemical fertilizer is prohibited, the leaf removal is done manually and the yields are limited with green harvesting. The domain limits to its stricter necessity the use of phytosanitary products.
    • Wine-making: The fermentation is made in thermos-regulated stainless steel tanks before the aging step lasting for 12 months in French oak barrels whose the third is new. Another third served to elaborate one wine and the other third, two wines.
