Fruity and crisp
This pale yellow wine releases acidulous, aerial and vegetal fragrances recalling fern and honeysuckle. Also acidulous, the attack unveils a mineral taste and a great finesse. Aromas of lilac bring elegance to the tasting before a tasteful finish full of finesse and temper.
Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.
Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.
Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Made of the Exora virgula fossils, some small comma shaped oysters, the Chablis’ subsoil gives the regional wines a unique character.

Domaine Jean Marc BROCARD
Created in 1923, the Chablisienne cooperative is comprised today of 300 winegrowers who cover over 25% of the Chablis vineyard. The Vaux Sereins is a special line created exclusively for Nicolas.
- Terroir: Spread across 1175 hectares, the cooperative vineyards lay on a clavey soil with an alternation of marl and limestone-marl with small “oysters.” The plots have a South-east and South-west orientation with many different climates.
- Viticulture: Collecting directly the grape musts from the winegrowers, the cooperative can assess in an immediate manner the quality of each plot.
- Vinification: The grapes’ must goes through a cold racking process prior to be fermented.
