Fruity and well-rounded
Light yellow colour with golden glints. Clear woody nose with hints of vanilla and butter. Opens on white flowers, acacia, hints of bergamot. Supple attack of fullness and tension. Straightforward lengthening on citrus fruit, frank character. Average persistence but a frank finish.
Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.
Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.
Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.
Domain and appellation
Château de Martinolles
From 1544, the monks have manufactured sparkling wine in the abbey of Saint-Hilaire. This rich heritage of wine growing marks the history of the Château de Martinolles, neighbour of the abbey. The vineyard extends over 80 hectares.
- Terroir: The soil is clay-limestone and the plots are mainly orientated North to an alititude between 190 to 300 meters.
- Viticulture: The harvests are carried out manually and each hectare had between 4200 and 6000 plants. A sustainable method of agriculture was adopted in order to reduce the impact of cultivation on the environment.
- Vinification: The wines are manufactured and aged in stainless steel tanks or small wooden barrels as well as in the french or american oak barrels.
