Fruity and crisp

Pale colour with greenish tints, rather light. Straightforward and fresh nose with aromas of white flowers, white fruit, fresh hint of peppermint, mineral note almost iodised. Frank with finesse. Dry and nervous, sapid finish.

Features

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Domain and appellation

  • CHÂTEAU DE L'HYVERNIERE

    This 15th century castle was completely destroyed by a fire during the revolution, then rebuilt to be bought in 1922 by Auguste Sautejeau, who transformed it into a large vineyard. In 2007, it became part of the Famille des Chateaux and Domaines Castel.

    • Terroir: This 58 hectare estate, situated in the communes of Chapelle  Heulin and Le Pallet, around thirty kilometres from Nantes, sitting on sandy clay, sandstone, shale and mica schist soils.
    • Vinification: Pressing takes place at a low pressure. The grape must is then kept in the cold for 7 days. This stabalisation is followed by fermentation at 15°C for 24 days. The wine is then aged in stainless steel and concrete vats on fine lees for 6 months with regular stirring to bring finesse to the wine.
