Powerful bouquet

Garnet colour with brick glints. Frank nose with a bouquet of spices. Notes of undergrowth, truffle. Opens on notes of cocoa. Supple attack of the envelope, of the balance. Frank character, freshness, notes of undergrowth. Good length and persistence. Clean finish.

Features

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

Domain and appellation

  • PRIEURE ST JEAN BEBIAN

    Marked by the ancestral dynamism of Pézenas, the vineyard of Domaine Prieuré Saint Jean de Bébian is a leader through its unique terroir and its great wines.

        Terroir: Spread over 32 hectares with the Cévennes as a backdrop, the white grape vines are planted on limestone soils worthy of the greatest terroirs of Burgundy and Champagne, with limestone levels above 30%. The red vines are planted on arid and stony limestone, clay-limestone and clay-silica soils.


        Viticulture: The vineyard was completely transformed in the 1960s with the addition of noble Rhone varieties (such as Grenache, Syrah and Mourvedre) to the traditional Mediterranean varieties (such as Carignan and Cinsault). Harvesting is done by hand.

        Vinification: A slow maceration of 6 to 9 weeks is carried out. Depending on the grape variety, the wine is matured in Burgundy barrels and demi-muids (1/3 new wood, 1/3 1 year old wood and 1/3 2 year old wood).
