Fruity and well-rounded
Garnet colour with black reflections. Nice frank nose of stewed fruit, liquorice, spicy notes of cumin and coriander. Well-balanced but quite warm, full-bodied and vinous, ripe tannins that melt into each other. Character on jammy fruits, sweet spices, hints of smoke, sweet pepper. Good length, straight, frank and vinous.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.
Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.
Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

The saga of Saint-Mont wine begins in the fourth century BC, making it one of the oldest vineyards in France. While imported by the Greeks, it experienced a significant development from 1050 with the founding of the Abbey of Saint-Mont by the Benedictines monks. They took advantage of the strengths of a region already taken over by vines.

Plaimont Producteurs
The cellars of Plaisance, Aignan and Saint Mont gathered their knowledge, inheritances, land and initials to form the cooperative Plaimont Producteur in 1979. The cellars of Crouseilles and Condom joined the group 20 years later.
- Terroir: Located in a medieval village of the same name, the vineyard of Château Sabazan is based on a tawny sand tray, allowing the Tannat to express the whole elegance of the wines.
- Viticulture: The harvest is manual.
- Vinification: Each variety is fermented separately in temperature-controlled stainless steel vats. The wine is then aged in oak barrels for 12 to14 months.
