The cold pre-fermentation maceration occurs without alcohol. The goal is to slowly extract the aromas from the grape’s pellicle and pulp. In Burgundy, this method aims at strengthening the pinot noir fruity aromas.
Domain and appellation
Established in 1831, the Albert Bichot Maison owns 4 domains implemented in the most prominent Burgundy wine areas of Chably, Côte de Nuits, Côte de Beaune and Côte Chalonnaise. Albéric Bichot oversees the family domain since 1996.
- Terroir: The Pommard wine is issued from the Domaine du Pavillon, a 17 hectares terroir located south of Beaune.
- Viticulture: An organic approach in favored in the vineyard. Each domain owns a team of pundits who know every details of the plots they are taking care of. The vines are in average 30 years old and renewed by 2 to 3% each year.
- Vinification: From the cold pre-fermentation to the 12 to 16 months ageing process in french oak, patience is key when talking about vinification at the Albert Bichot domain.
