Fruity and crisp

Pale straw yellow colour with moonlight reflections, limpid and brilliant. Open nose with notes of pear in syrup, white peach and barley sugar, with a hint of lemon cream. Supple attack, acidulous, mineral, good balance, tension, freshness, character on citrus fruits and minerality. Sapid finish, crisp, straight, medium persistence on citrus fruit.

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Ideal as a starter with Seafood, Oyster. The mineral and precise character of the wine can also work wonders with goat's cheese.

    Listening, selecting and developing are Olivier Tricon's key words. His vintages are moments to be shared, little pieces of his history and of our terroir. Terroir & viticulture: Maximum yield of 60hl ha with a total area of 1132ha in the appellation. The vines draw their mineral energy from the limestone marls. The Kimmeridgian rock brings this crystalline character and all the typicality to our Petit Chablis. The harvest is carried out by machine at optimal maturity. The grapes are taken to the winery and sorted with the greatest respect to preserve their aromatic and taste potential. From harvest to bottling, strict hygiene is observed to ensure the greatest gustatory precision. Vinification & Maturing : Delicate pressing of the grapes allows us to extract the best from the fruit. Fermentation takes place in stainless steel vats to guarantee freshness and liveliness in the wine.
