Features

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

Domain and appellation

  • Domaine Sauveroy

    The Sauveroy estate, created in 1866, is located in the heart of the hills, near the layon river bordering the village of Saint Lambert du Lattay in Anjou. The family estate, Sauveroy is known for its preferred terroir, conducive to the maturity of Cabernet Franc.

     
     

    • Terroir: The vineyard of 30 hectares is located on soils with alteration of deep shale of the Armorican massif with vein of quartz and Gres.

       
    • Viticulture: The harvests are mechanical with sorting in the plot and cellar.

       
    • Vinification: Selection of the best parcels of Cabernet Franc to get the maximum maturity, then traditional maceration of 14 to 19 days. Aging on fine lees for 9 months in vat.
