Powerful wine with potential

Beer with an off-white head, good body. Aged gold colour with golden highlights. Straightforward nose with hints of honey, candied apricot, caramelised cereals and bread. Supple attack, well-balanced. Medium body. Caramel and brioche character. Slight length, frank character. Average persistence but thirst-quenching.

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

The phoenix represents the renaissance of a town (Pantin), of a district and more generally of beer.
