Fruity and well-rounded

Its dark ruby color brings out a fresh woody aroma with hints of a spicy mint character with a nervous finish with tannins that blend.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

Domain and appellation

  • Domaine Du Moulin

    Gaillac is one of the oldest vineyards of Gaule which owes its development to the monks of the abbey of Saint-Michel. Located on both banks of the Tarn, surrounding the historic town of Gaillac, the Domaine du Moulin Hirissou has belonged to the family for over three centuries.

     

    • Terroir: This area of 38 hectares combines two high quality soils and original grape varieties: Braucol Duras for red grapes and white with mauzac muscadelle.

     

    • Viticulture: 3/4 of the harvest is done manually and 1/4 mechanically.
