Fruity and light

Its shiny onion peel color offers a nose on fresh notes of fennel and garrigue. In the mouth this wine has a good balance, with nervous and roundness.

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

Domain and appellation

  • Château Cavalier

    Owned by Maison Castel since 2000, Château Cavalier is located between Aix-en-Provence and Nice, in the Var region and produces high-quality rosé wines.
     
     

    • Terroir: Spread over 130 hectares, the vines evolve on sandy and shallow soils, favoring drainage.

       
    • Viticulture: The harvest was carried out overnight in order to avoid oxidation.

       
    • Vinification: Cinsault is vinified at low temperatures and very low turbidity to obtain very aromatic wines. For Grenache a skin maceration (between 4 and 8 hours) is carried out. Classical fermentation takes place between 14 and 18 ° C depending on the grape variety. The breeding takes place in stainless steel tanks on fine lees for 2 to 3 months.
