Fruity and crisp

Château de l'Hyvernière
This castle of the XVth century was completely destroyed by a fire during the Revolution and rebuilt to be purchased in 1922 by Auguste Sautejeau, who transformed it into a vast vine-yard. In 2007, it was integrated into the Family of Chateaux and Domaines Castel.
- Terroir: This area of 58 hectares, located in the towns of Chapel Heulin and Pallet, about thirty kilometers from Nantes, is based on sandy soils of clay, sandstone, schist and mica schist.
- Vinification: Pressing is carried out at a low pressure, followed by a fermentation at 16 ° C for 24 days. The wine is then aged on lees for six months.
